Baked Stuffed Bell Peppers with Fried Rice is very delicious and easy to make brunch recipe. It is liked by all age groups.


Here is the details of its ingredients and method:
Ingredients:-
 Capsicum (Big) - 250 gms (Cut in halfs and de-seed it)


 For Stuffing:
 Boiled Rice - 2 cups
 Boiled Potato - 1 (finely chopped)
 Cottage Cheese - 100 gms (finely chopped)
 Capsicum - 1 (finely chopped)
 Soya Granules - 1/2 cup (soaked)
 Onion - 1 (chopped)
 Garlic - 3 cloves (finely chopped)
 Ginger - 1"pc (cut in Juliennes)
 Soya Sauce - 1 tbsp
 Tomato Sauce - 2 tbsp
 Grounded Black Peppercorns - 1/2 tsp
 Salt to taste
 Oil - 2 tbsp.
 Chopped Coriander Leaves - 1 tbsp
 Lemon Juice - 1 lemon
 Mozzarella Cheese - 50 gms (grated)
 Chilli Flakes - 1/4 tsp
 
Method:-
1. For stuffing, heat oil in a non-stick pan. Then add chopped garlic and ginger in it and roast it. After that add onion into it and cook it until translucent.

2. Then add chopped capsicum into it and stir fry it. Also add soya granules, boiled potato and cottage cheese into it and mix it well. Then add soya sauce and tomato sauce into it and mix it. Season it with grounded black peppercorns and salt to taste.

3. Then add boiled rice and mix it well. Switch off the flame. Lastly add chopped coriander leaves and lemon juice into it and mix it well.

4. Preheat the oven at 180 degree Celsius for 5 minutes. In the meanwhile stuff the capsicums with fried rice. Place it on greased baking tray. Top it with grated mozzarella cheese, coriander leaves and sprinkle some chilli flakes.

5. Bake it at 160 degree Celsius for 15 minutes. Delicious fried rice in capsicum is ready. Serve it hot.

Notes:
1. You can use any of the red, yellow or green bell peppers for this recipe .
2. Use big or medium sized capsicum for this recipe.
