Jaggery Rice is a delicious and healthy sweet dessert recipe. It is specially prepared in festivals like Lohri, Pongal, etc. It is so easy and simple recipe.

Here is the list of ingredients and method of it:
Ingredients:
Basmati Rice- 1 Cup (soaked in water for 20-30 minutes)
Jaggery - 3/4 cup (grated)
Pure Ghee - 2 tbsp
Almonds - 5-6 (roughly chopped)
Walnuts - 3-4 kernels (roughly chopped)
Cashew Nuts - 6-7 (roughly chopped)
Raisins - 1 tbsp
Desiccated Coconut - 1 tbsp
Cloves - 3-4
Fennel Seeds - 1/2 tsp
Cinnamon Powder - 1/2 tsp
Black Cardamom - 1 (crushed)
Green Cardamom - 3 (crushed)
Method:
1. Take 2 cups of water and heat it. Then add grated or crushed jaggery in it and melt the jaggery. When the jaggery melts switch off the flame and strain the water.
2. Heat 2 tbsp of ghee and put fennel seeds, crushed black cardamom, green cardamom and cloves in it. Then add almonds, cashew nuts, walnuts and raisins in it and roast it.
3. Then add soaked rice and jaggery water in it and mix it. Lastly add cinnamon powder and mix it well. Cover it with lid and cook it until rice tenders and absorb all the water content.
4. Jaggery rice is ready now. Garnish it with dry fruits and desiccated coconut and serve it hot.
