Sweet Boondi Rice (Guldana Rice)

Here is the list of ingredients and its method:
Ingredients:
Basmati Rice- 1 Cup (soaked for 15-20 minutes)
Guldana (Sweet Boondi) - 1 cup
Sugar - 3 tsp
Pure Ghee - 2 tsp
Almonds - 5-6 (chopped)
Walnuts - 3-4 kernels (chopped)
Cashew Nuts - 6-7 (chopped)
Raisins - 1 tbsp
Dry Coconut - 1 tbsp (cut in thin slices)
Desiccated Coconut - 1 tsp
Flax Seeds - 1 tsp
Melon Seeds - 1 tsp
Bay Leaf - 1
Cloves - 5
Green Cardamom - 3 (crushed)
Cinnamon Powder - 1 pinch
Black pepper corn  - 8-10
Fennel Seeds - 1 tsp
Black Cardamom - 1 (crushed)
Oil - 1 tsp

Method:
1. Heat water in a pan. Add crushed 1 green cardamom, 2 cloves, bay leaf, cinnamon powder, 1 tsp of oil and soaked rice. Cook it until rice tenders. Strain the water and keep it aside.
2. Heat 2 tsp of ghee and then add fennel seeds, crushed green cardamom, black cardamom, bay leaf, cloves and black pepper corns in it.
3. Then add half of chopped nuts: almonds, cashew nuts, walnuts, dry coconut and raisins in it and roast it.
4. Then add boiled rice and sugar in it. Mix it well. Also add desiccated coconut, flax seeds and melon seeds in it and mix it well. Cover it with lid and cook for 1-2 minutes or until rice cooked well on slow flame.
5. Lastly add guldana (sweet boondi) in it and mix it well. Switch off the flame. Guldana rice is ready. Garnish it with guldana and dry fruits and serve it hot.
