Semolina Vegetable Appe/ Paniyaram


Appe/ Paniyaram is a popular south Indian snack dish. I add seasonal vegetables into it for more taste and in this way it also becomes more healthier. You can have this healthy dish in your breakfast or as an evening snack along with tea/ coffee. You can also serve this tasty and healthy dish in your kid's tiffin box along with tomato ketchup. They surely likes it. For making this we need the Appe/ paniyaram pan which is a non-stick pan having  7, 12 or more cavities for making this delicious snack item.

Here is its ingredients and method:
Ingredients:
Semolina (Rava) - 1 cup
Curd - 1 cup
Finely chopped Capsicum - 1
Grated Carrots - 1
Grated Bottle Gourd - 2 tbsp
Grated Beetroot - 1
Finely chopped Onions - 1
Chopped Green Chilli - 1
Chopped Coriander Leaves - 1 tbsp
Baking Soda - 1/2 tsp
Chilli Powder - 1/2 tsp
Salt to taste
Curry Leaves - 7-8
Mustard Seeds - 1 tsp
Cumin Seeds- 1 tsp
Urad dal - 1 tsp
Chana dal - 1 tsp
Asafoetida - 1 pinch
Oil - 1 tbsp.

Oil for greasing the appe pan

Method:-
1. Take a bowl and put semolina, chopped capsicum, carrots, onions, bottle gourd, coriander leaves and curd in it and mix it well. Then add water as required and make a smooth batter like idli. Keep it aside for 10-15 minutes to rest.
2. In a tadka pan heat oil and put curry leaves. Then add mustard seeds and cumin seeds in it. Once it starts spluttering then add urad dal, chana dal in it. Then add asafoetida and chopped green chillies and mix it well. Cool it down.
3. Then put the tadka in a rava mixture. Also add chilli powder and salt to taste and mix it well. Just before making the appe add beetroot and baking soda into it and mix it well.
4. Heat the appe pan and grease each cups of it with the oil. Then put 1 spoon full of batter into each cavity, cover it with lid and cook on low flame for 2-3 minutes.
5. After that flip it if cooked from one side and let it cook from the other side till it crisps and golden. Then remove all the cooked appes from the pan and make other batches in the same way.
6. Semolina Vegetable Appe is ready to serve. Serve it hot with tomato ketchup, coconut chutney or mint coriander chutney.
