Gatte Ki Sabzi (Gram Flour ki sabzi)


Gatte ki Sabzi is one of the popular Rajasthani Sabzi or side dish. It is so delicious and made of with gram flour. You can serve this along with Chapati, Paratha or Rice, according to your choice.

Here is the list of ingredients and method:
Ingredients:
Gram Flour - 1 and 1/2 cup
Onion - 2 (roughly chopped)
Tomatoes - 3 (roughly chopped)
Oil - 4-5 tbsp
Coriander Leaves - 2 tbsp (chopped)
Coriander Stems - 2 tbsp (chopped)
Green Chillies - 3
Garlic - 7-8 cloves
Ginger - 1" pc.
Salt to taste
Asafoetida - 2 pinches
Red Chilli Powder -1/4 tsp
Turmeric Powder - 1/2 tsp
Kashmiri Mirch - 1 tsp
Garam Masala - 1 tsp
Cumin Seeds - 1 tsp
Coriander Seeds -1 tsp
Carom Seeds - 1 tsp
Bay Leaf - 1
Dry Red Chillies - 2
Dry Fenugreek Leaves - 2 tsp
Curd - 1/2 cup

Method:
1. In a mixer jar, put onions, tomatoes, garlic, ginger, green chillies and coriander stems and grind them into a paste.
2. In a mixing bowl, take gram flour in it. Also add cumin seeds, carom seeds, coriander seeds, 1 tsp of Dry Fenugreek Leaves, 1/2 tsp garam masala, 1/4 tsp red chilli powder, 1/4 turmeric, salt to taste, asafoetida, half of chopped coriander leaves and 2-3 tbsp oil into it and mix it. Then add adequate water to make a firm dough.
3. Make rolls of the dough. Then boil all the rolls in a water until it floats. Then cut that into 1 cm pieces.
4. For curry, heat 2-3 tbsp oil in a pan. Then put bay leaf and dry red chilli. After that put grinded masala and cook it until it leaves oil. Also add asafoetida, kashmiri mirch and mix it well.
5. Then add curd into it and cook it. Then add remaining dry fenugreek leaves, rest of the turmeric powder, salt to taste and mix it well.
6. After that add 1/2 tsp of garam masala into it and mix it well. Lastly add gatte in it and mix it. Then add water in it as per your choice and cook for 5-7 minutes.
7. Add remaining chopped Coriander Leaves in it. Delicious gatte ki sabzi is ready to serve. Serve it hot.
