Tamarind Rice (Pulihora)


Tamarind Rice is the popular and delicious south Indian recipe. It is known as Pulihora in Telugu language. It is served as prasadam in the temples. It is sour, cruncy and spicy rice recipe. You can cook this recipe with the leftover boiled basmati rice.

Here is the ingredients and method of it.
Ingredients:
India Gate Basmati Rice - 1cup
Salt to taste
Oil - 1 tsp

For Tempering:
Curry leaves - 9-10
Jaggery Powder - 2 tsp
Chana Dal - 1 tsp
Urad Dal - 1 tsp
Oil - 3 tsp
Raw Peanuts - 2 tbsp
Dry Red Chilli - 2
Mustard Seeds- 1 tsp
Asafoetida - 1 pinch
Turmeric Powder - 1/4 tsp
Salt to taste

Special Grounded Spice:
Dry Red Chilli - 2
Coriander Seeds - 2 tsp
Chana Dal - 1& 1/2 tsp
Urad Dal - 1& 1/2 tsp
Fenugreek Seeds - 1/4 tsp
Black Peppercorn - 1 tsp
Sesame Seeds - 2 tsp

For tamarind Pulp:
Tamarind - 35 gms (soaked in water and then sieve it)

Method:
1. In a pan put washed basmati rice, salt to taste and 1 tsp oil and water as required and boil the rice until it cooked.
2. For special grounded masala, Dry Roast dry red chilli, coriander seeds, chana dal, urad dal, fenugreek seeds, whole black pepper corns and sesame seeds and make a powder of them in a grinder.
3. For tempering heat oil in a pan and add mustard seeds in it. Then add washed urad dal and chana dal in it. When it starts crackling then add curry leaves in it.
4. Then add dry red chillies in it. Then add raw peanuts and roast it well. Then add asafoetida in it and mix it. Then add turmeric powder and salt to taste in it and mix it.
5. After that add tamarind pulp in it and mix it. Also add jaggery powder in it and cook until it thickened. Then add boiled rice in it and mix it well. Lastly add special grounded masala in it and mix it well. Tangy and spicy tamarind rice is ready now. Serve it hot along with curd, rayta or papad.
