Jaggery Paratha (Gud ka Paratha)

Jaggery Paratha (Gur ka paratha) is a sweet healthy and tasty delicacy. We all know the fact that Jaggery has so much health benefits. Furthermore in this recipe dry fruits and seeds are also incorporated. So it contains bunch of health nutrients.


Must make this fancy and yummy Jaggery (gudh) ka paratha. It is surely liked by kids and even adults too.

Here is the list of ingredients and method of it:
Ingredients:
Whole Wheat Flour - 1 Cup
Jaggery - 1/2 cup (grated)
Almonds - 8-10
Cashew Nuts - 8-10
Walnuts Pcs. - 5-6
Desiccated Coconut Powder - 3 tbsp
Melon Seeds - 1 tsp
Flax Seeds - 1 tsp
Dry Ginger Powder - 1/2 tsp
Cinnamon Powder - 1/4 tsp
Fennel Seeds - 1 tsp
Green Cardamom - 3
Ghee - 3-4 tbsp.

Method:
1. Put whole wheat flour in a bowl and add adequate water to knead a soft dough. Keep it aside to rest for 10-15 minutes.
2. In a non stick pan, dry roast cardamom, fennel seeds, melon seeds, flax seeds until crisp. Then add dry ginger powder and cinnamon powder in it and mix and remove it in a plate.
3. Put 1/2 tsp of ghee in a pan and heat it. Then add almonds, cashew nuts and walnuts and roast them.
4. Make a powder of roasted seeds, spices and dry fruits mixture in a mixer.
5. In a bowl put grated jaggery, desiccated coconut powder and powdered mixture of roasted seeds, spices and dry fruits in it and mix it well. Stuffing is ready.
6. Now make lemon sized balls of dough and take one of it and roll it like a chapati. Take second ball of dough and roll it too like a chapati. Put 2-3 tbsp of stuffing mixture and spread it well and cover it with the other chapati and seal it. Make gujia like design with the help of fork.
7. Heat the tawa and put the paratha on it. Apply ghee on both sides and cook the paratha until golden marks. Jaggery paratha is ready and make all the parathas in the same way.
8. Serve it hot along with hot tea, milk, pickle or chutney of your choice.
