Curd Rice


Curd Rice is the popular and delicious south Indian recipe. It is a mixture of curd and rice along with mild spices. It is served cool. You can cook this recipe with the leftover boiled rice. You can also add pomegranate and sprouts in it to make it more healthy.

Here is the list of ingredients and method of it:
Ingredients:
Boiled Rice - 1 cup
Fresh Curd - 1/2 cup
Onion - 1 (chopped)
Grated Ginger - 1 tbsp
Urad Dal - 1 tsp
Channa Dal - 1 tsp
Curry leaves - 7-8
Green Chillies - 3 (make a slit in centre)
Dry Red Chilli - 1
Grated Carrot - 1/2 cup (optional)
Oil - 2 tbsp
Mustard Seeds - 1 tsp
Cumin Seeds- 1 tsp
Asafoetida - 1 pinch
Garam Masala - 1/2 tsp
Salt to taste

Method:
1. In a bowl put boiled rice and fresh curd and mix it well. Mash the rice slightly while mixing it.
2. Heat oil in a pan and put cumin seeds, mustard seeds, washed urad dal and channa dal in it. Once it starts crackling then add curry leaves into it.
3. Then add green chillies and dry red chilli. After that add grated ginger and asafoetida into it and mix it well.
4. Then add onions and saute it until translucent. Then season it with salt to taste and garam masala. Cool it down.
5. Put this into the mixture of rice and curd. Also add grated carrots in it and mix it well. Curd rice is ready. Garnish it with grated carrots and serve it.
