Lemon Rice

 
                    

Lemon rice is the popular south Indian dish. It is tangy, crunchy, healthy and delicious recipe. It is so simple to cook. You can also make it with leftover plain rice.

Here is its ingredients and method: 
Ingredients:
Basmati Rice (soaked) - 1 cup
Onion (chopped) - 1
Raw Peanuts - 4 tbsp
Cumin Seeds - 1 teaspoon
Mustard Seeds - 1 teaspoon
Asafoetida - 1 pinch
Yellow Food Colour - 2 pinch
Cashew Nuts - 2 tbsp
Chana Dal - 1 tsp
Urad Dal - 1 tsp
Lemon Zest of 2 lemons
Lemon Juice of 2 lemons
Dry Red Chilii- 1
Green Chilli - 1 (chopped)
Bay Leaf - 1
Cloves- 2
Green Cardamom - 2
Black Pepper Corn - 7-8
Curry Leaves - 4-5 (Dry or fresh)
Garam Masala - 1 teaspoon
Red Chill powder - 1 teaspoon
Salt to taste
Oil - 2 tablespoon

Recipe:-
1. Heat water in a pan and add yellow food colour in it and then add soaked rice in it. Also add crushed green cardamoms, black pepper corns, bay leaf and cloves in it and let it boil. Then add salt to taste and 1 tsp of oil in it. When rice cooked well then drain the water and keep it aside.

2. Take a non-stick pan and put it on the stove. Put oil into it and once the oil become hot, add cumin seeds, dry red chilli, curry leaves and mustard seeds into it and let them splutter.

3. After that put washed chana dal and urad dal into it and roast it. Then add chopped green chillies and mix it. After that add raw peanuts and cashews in it and roast it well. Then add onions into the pan and let them fry into the oil for 2 minutes.

4. Then add spices- asafoetida, red chilli powder, garam masala and salt to taste into it and mix it well. Then add lemon zest into it, mix it and switch off the flame.

5. Then add the boiled rice into the pan and also add lemon juice in it and Mix it well. The healthy, delicious, tangy and crunchy lemon rice is ready now. Serve it hot along with papad, chutney, etc.
