Onion Kachori (Pyaag ki Kachori)



Onion Kachori (Pyaag ki Kachori) is a popular crispy deep fried Rajasthani snack. The outer part is made of with refined flour and stuffing is made of with onions and other spices. It is so scrumptious recipe. You can serve it as a evening snack or serve it with tea or coffee as per your choice. It can be served with tomato ketchup or mint coriander chutney or any other chutney.


It is simple to make it so you can easily make it at home. Must try this recipe and serve it to your family or guests along with cup of tea, coffee or hot milk and make them happy.


Here is the detail of all ingredients and its method:

Ingredients:-
For Dough:
Refined Flour (maida) - 200 gms
Salt to taste
Melted Ghee - 40ml
Kasuri Methi - 2 tsp
Baking Powder - 1tsp


For stuffing:
Onion - 2 (finely chopped)
Gram Flour (Besan) - 2 tbsp
Cumin Seeds - 1 tsp
Coriander Seeds - 1 tsp (crushed)
Asafoetida - a pinch
Salt to taste
Fennel Powder - 1 tsp
Chilli Powder- 1/2 tsp
Garam Masala - 1/2 tsp
Chaat Masala - 1 tsp
Oil - 2 tbsp.


Oil for deep frying


Method:
1. Take a bowl and put refined flour, crushed kasuri methi, melted ghee, baking powder and salt to taste in it and mix it well with your hands. Then add adequate water to knead a tight dough for kachori. Keep it to rest for 10 minutes.

2. For stuffing take a pan and heat 2 tbsp of oil into it. Then add cumin seeds and coriander seeds into it. When it starts crackling then put asafoetida and chopped onions into it and let it saute until translucent. Then add gram flour (besan) into it and roast it until light brown. Then season it with chilli powder, fennel powder, garam masala, chaat masala and salt to taste and mix it well. Keep it aside for cooling down.

3. Then divide the dough into 12-15 equal parts. Make balls of it. Take one ball of dough and flatten it. Then put 1/2 tsp of stuffing over the centre of it and gather the edges and seal it well. Then gently press it with your palm to make a kachori. Make all the kachori in the same way.

4. Take a pan and heat oil for deep frying the kachori. Then put kachori one by one in the oil and deep fry it on low heat until crisp and golden. Fry all the batches of kachori. Cool it down. Crispy Onion Kachori is ready. Serve it immediately with a cup of tea or coffee or store it in the airtight container for 4-5 days.
