Jackfruit in Curry (Kathal ki sabzi)



Jackfruit in Curry (kathal ki sabzi) is delicious side dish which can be served with chapati, rice, etc. Jackfruit has so much health nutrients. It is the rich source of vitamin, mineral, carbohydrate, fibre, fat, protein, etc. It contains no cholesterol or saturated fat. It provides various benefits to our health, skin & hairs. In this recipe, Fried jackfruit and potato dices cooked in onion tomato curd curry.

This is easy to cook and so tasty. You can serve it with chapati, paratha, rice,  oats, quinoa, etc.


Here is its ingredients and method:


Ingredients:
Jackfruit (Kathal) - 250 gms (diced)
Potatoes - 2 (medium) (diced)
Onion - 1 (grated)
Garlic - 3-4 cloves (crushed)
Ginger-green chilli Paste - 1 tsp
Tomatoes - 4 (puree)
Curd - 1 cup
Bay Leaf - 1-2
Chopped Coriander Leaves - 1 tbsp
Cumin Powder - 1tsp
Kashmiri Chilli Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Garam Masala - 1/2 tsp
Cinnamon Powder - 1/4 tsp
Salt to taste
Oil - 2-3 tbsp.


Oil for deep frying


Method:
1. Heat oil into the pan and deep fry Jackfruit and potato dices until golden brown. Remove them from oil.

2. Keep 2-3 tbsp of oil into the pan and heat it. Then put bay leaves into it. After that add grated onions into it and cook it until brown.

3. Then add crushed garlic and ginger green chilli paste into it. Lastly add Tomato puree into it and mix it well and cook on slow flame for 1-2 minutes.

4. Then put cumin powder, kashmiri chilli powder, turmeric powder, garam masala, cinnamon powder and salt to taste into it and mix it well.

5. When masala leaves the oil then add 1 cup of curd and cook it until it absorbs well. Then add 1 cup of water and fried dices of jackfruit and potatoes in the gravy, cover it with lid and let it cook for 10 minutes on medium flame. Keep stirring.

6. When Jackfruit and potato cooked well then sprinkle chopped coriander leaves and mix it well.

7. Jackfruit in curry (Kathal ki sabzi) is ready to serve. Serve it hot along with chapati/ paratha/ rice/ etc.
