Masala Parval Sabzi (Pointed Gourd)



Masala Parval (Pointed Gourd) sabzi is delicious and healthy side dish which is served with chapati, rice, etc. Pointed Gourd contains so much health benefits. It is one of the nutritious food and contains vitamin A, B1, B2 and C. It has very low calories and helps to keep the cholesterol level in control. In this recipe, roasted pointed gourd and potato wedges cooked in onion tomato gravy.


This is easy to cook and so tasty. You can serve it in breakfast with paratha or in lunch or dinner with chapati or rice.


Here is its ingredients and method:


Ingredients:
Parval (Pointed Gourd) - 500 gms
Potatoes - 2 (medium)
Onion - 1 (grated)
Garlic - 3-4 cloves (crushed)
Ginger-green chilli Paste - 1 tsp
Tomatoes - 4 (puree)
Chopped Coriander Leaves - 1 tbsp
Cumin Powder - 1tsp
Red Chilli Powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Garam Masala - 1/2 tsp
Salt to taste
Oil - 5-6 tbsp.


Method:
1. Wash the parvals (pointed gourd) & Potatoes and then peel it. Cut it into half lengthwise and de-seed it. Then make a slit on centre of each half. Cut the potatoes into wedges.

2. Put oil into the pan and heat it. Then shallow fry parval and potato wedges for 3-4 minutes. Remove them from oil.

3. Keep 2 tbsp of oil into the pan and heat it. Then add grated onions into it and cook it until brown. Then add crushed garlic and ginger green chilli paste into it. Lastly add Tomato puree into it and mix it well and cook on slow flame for 1-2 minutes.

4. Season it with cumin powder, red chilli powder, turmeric powder, garam masala and salt to taste. Mix it well. When masala leaves the oil then add 1/2 cup of water and roasted parvals and potato wedges in the gravy, cover it with lid and let it cook for 8-10 minutes on medium flame. Keep stirring. When parval and potato cooked well then sprinkle Chopped coriander leaves and mix it well.

5. Masala Parval is ready to serve. Serve it hot with chapati, paratha or rice.
