Capsicum Roundels with Potato Stuffing





Capsicum Roundels with Potato Stuffing is a delicious side dish which is made of with capsicum and stuffed with spicy boiled potato mix. It is easy and simple to make. You can also add soya granules in the stuffing to make it more healthy. It can be served as a brunch recipe or as a side dish at lunch or dinner.



Here is the list of ingredients and its method:


Ingredients:-
Green Capsicum (big) - 3
Potatoes - 500 gms (boiled)
Onion - 1 (finely chopped)
Cottage Cheese - 200 gms (crumbled)
Mustard Seeds - 1 tsp
Cumin - 1 tsp
Green Coriander Leaves - 2 tbsp (chopped)
Dry Mint leaves - 1 tbsp
Dry mango powder - 1 tsp
Garam Masala - 1/2 tsp
Red Chilli Powder - 1/2 tsp
Salt to taste
Oil - 4-5 tbsp.


Method:


1. Wash the capsicum and cut it into half inches roundels. De-seed it and keep it aside.

2. Heat 1 tbsp of oil in a pan then add cumin and mustard seeds into it. When it starts crackling then add onions and sauté it until translucent. Then add mashed boiled potatoes and crumbled cottage cheese and also add the seasoning (Salt, red chilli powder, garam masala and dry mango powder) and mix it well. Lastly sprinkle crushed dry mint leaves and chopped coriander leaves for flavour and mix it well.

3. Take one roundel and put it on your palm and fill it with the potato stuffing. Stuff all the roundels in this way. Take a non stick pan and heat 2 tbsp of oil and carefully place the stuffed capsicum roundels in pan for shallow frying. Drizzle the oil on the other side too. When it cooked and crisps from one side, flip it with the help of spatula and let it cook until nice golden colour. Capsicum Roundels with potato stuffing is ready. Serve it hot as a snack or along with chapati or paratha. (You can also bake it in oven for 15 minutes at 180 degree Celsius)
