Soybean Cutlet



Soybean Cutlet is simple, nutritious, delicious and crispy shallow fried snack made with soybean dal along with the veggies and mix of spices. It is a kind of healthy snack as it is not deep fried and also the main ingredient of this recipe is soybean which is a good source of protein. You can serve it as a evening snack.



Here is the detail of ingredients and its method:


Ingredients:
Soybean - 1 cup (soaked overnight)
Cauliflower - 1/2 cup (grated)
Green Capsicum - 1 (finely chopped)
Onion - 1 (finely chopped)
Ginger - 1 tbsp (chopped)
Rice Flour - 3-4 tbsp
English Mustard - 1 tbsp
Green Chillies - 2-3 (chopped)
Coriander Leaves - 3 tbsp
Cumin Seeds - 1 tsp
Red Chilli Powder - 1/2 tsp
Garam Masala - 1/2 tsp
Chaat Masala - 2 tsp
Salt to taste
Oil


For Serving:
Tomato Ketchup - 2 tbsp
Mayonnaise - 2 tbsp
Cucumber Ribbons - 1


Method:
1. Put soaked soybean in a mixer jar and make a paste. Then put the soybean paste into a mixing bowl. Add grated cauliflower, green capsicum, onion, ginger, rice flour, English mustard, chopped green chillies, coriander leaves, cumin seeds, red chilli powder, garam masala, chaat masala and salt to taste in it and mix it well. If you feel that mixture is still loose then add 1 more tbsp of rice flour and mix it well. (While grinding the soybean don't add much water)

2. Divide the mixture into 8-9 equal parts and shape them like a tikki one by one.

3. Heat a non stick pan. Grease it with oil and then put the cutlets on the tava for shallow fry and let it cook on low flame. Pour some oil over the cutlets. When one side of the cutlet turns brown and crisp then flip it carefully and sprinkle some more oil and cook the other side. Remove the cutlets from the tava when cooked from both sides. Crispy Soybean cutlets is ready to serve.

4. Take a bowl and put tomato ketchup and mayonnaise in it and mix it well and make a dip. Serve the Soybean cutlets in a platter and garnish it with dip and cucumber ribbons. Serve it hot with tea or coffee.
