Spicy Ginger Pickle




We all know the fact that in India pickles are very important part of our dining table. We have a variety of pickles in our treasure of pickles, say, raw mango pickle, lemon pickle, sweet lime pickle, green or red chilli pickles, ginger pickle, etc. Also for making these pickles there are many ways. Every family who make the pickles has its own way to prepare it. The preserving time of the pickles are also different.


Today I will talk about the pickle of ginger. We all know that ginger has many nutritions in it. It is used as a spice or a medicine. It aids digestive issues. It is also used in Ayurveda as a remedy for nausea, joint pain, etc. Ginger pickle can be made with different styles. You can pickled it in vinegar, or prepare combined pickle of ginger, lemon and green chilli, etc. I made the spicy ginger pickle and sharing the recipe of the same.


Here is the list of all ingredients and method of preparing:


Ingredients:
Ginger - 250 gms
Garlic - 3 cloves
Salt - one and half teaspoon (approx)
Kashmiri Chilli Powder - 2 tbsp
Garam Masala - 1 tbsp
Turmeric Powder - Half tbsp
Mustard Oil - approx. 200 ml
Asafoetida - Half tsp
Black Pepper Corns - 1 tbsp
Fennel Seeds- 1 Tbsp
Bay Leaf - 2-3 leaves
Dry Red Chillies - 2-3
Vinegar - 50 ml
Tamarind Paste - 2 tbsp


Method:
1. Put Black Pepper Corns, Fennel Seeds, Bay Leaf and Dry Red Chillies into mixer jar and grind it.


2. Make paste of Garlic and 50 gms of Ginger.


3. Peel and Cut rest of the 200 gms of ginger in thin slices.


4. Take a pan and put mustard oil into it and heat it. Once it becomes hot then add ginger garlic paste and asafoetida into it. Roast the paste & then add Kashmiri Chilli Powder, garam masala, Turmeric powder, above grinded masala and salt to taste into it, mix it well and roast until it leaves the oil. Then add tamarind paste and mix it.


5. After that add sliced ginger and vinegar into it and mix it. Cook for 1-2 minutes and that's it. Spicy Ginger Pickle is ready. Cool it and store it in a sterilized jar for later use. It can be preserved for 3-4 months.


If you want to add sweetness in this pickle then you can add jaggery/ sugar into it. It is totally optional.
