Samak Uttapam is so delicious and is a perfect dish for having on Navratri's fasting. If you get bored with the conventional fasting food, then this will be the best option for breaking the monotony in the fasting food. You can also made this recipe with the buckwheat flour (kuttu ka atta) or water chestnut flour.
Here is the detail of ingredients and method of it:
Ingredients:-
For Batter:
Samak Flour - 1 cup
Rock Salt to taste
Cumin Seeds - 1 tsp
Grated Ginger - 1 tsp
Chopped coriander leaves - 1 tbsp
For topping:
Boiled potato -4-5 (mashed)
Grated Cauliflower - 2-3 tbsp
Grated Ginger - 1 tsp
Chopped coriander leaves - 1 tbsp
Rock Salt to taste
Red Chilli powder - 1/2 tsp
Chopped Cashew nut - 1 tbsp
Chopped Almonds - 1 tbsp
Cumin seeds - 1 tsp
Sesame Seeds - 3 tbsp
Oil - 2-3 tbsp
Method:-
1. Take a mixing bowl and put all ingredients of batter into it & mix it. Then add adequate water into it and mix it with the help of whisker so that no lumps be made in it. Consistency of batter should be like Cheela. Then keep it aside.
2. Take another bowl and put all ingredients of topping into it. Mix it well with your hands.
3. Put nonstick tawa on the medium heat flame. Then grease it with oil. Once it becomes hot then pour one or two ladles full of samak batter into it and make a round shape of it. After that spread the topping mixture of potato over it and sprinkle some sesame seeds too over it and press it gently with the help of spatula. Make sure your gas flame should not be high. When one side of the uttapam cooked then pour a spoon of oil over the toppings and carefully flip that with the help of spatula. Gently press it so that it gets nice golden colour. (make sure you mix the batter well before pouring it on tava)
4. When the other side of the uttapam be also cooked then cautiously flip it into the serving plate. Samak Uttapam with Potato toppings is ready to serve. Serve it hot with salad or hung curd dip.
