Pumpkin Halwa - Navratri Special





Halwa is very popular dessert in India. It can be made of with different flours like wheat flour, gram flour, semolina, etc, with different pulses like split chickpeas, split moong dal, etc. It can also be made with different vegetables like carrots, bottle gourd, potato, beetroot, etc. As Navratras is coming so today I am sharing the recipe which you can have in Navratra's fast, and that is, Pumpkin Halwa. It is so delicious in taste. You can also have this pumpkin halwa in regular days.

We all know that kids do not like to eat pumpkin, in fact, many adults too. But it contains the phenomenal nutrients and is one of the low calorie vegetable. It is rich in vital anti-oxidants, dietary fibre, minerals and vitamins.  So we should include it in our daily meal and this is the best way for it. I am pretty sure that everyone, be it a kid or adult, likes this scrumptious halwa. In this recipe I used the food colour to give nice yellow colour to halwa but you can make it without the colour. You can also add milk powder in it for more richness.

So in this navratras try this delicacy at home and enjoy it.

Here is its ingredients and method of preparing it:-

Ingredients:
Pumpkin - 200 gms
Ghee - 70 gms
Milk - 200 ml
Sugar - 5 tbsp
Yellow food Colour - 2 pinches (optional)
Cardamom Powder - 1 tsp
Walnuts - 2 tbsp
Cashew Nuts - 2 tbsp.
Almonds - 2 tbsp
Raisins - 2 tbsp
Desiccated Coconut - 2 tbsp

Method:
1. Take a pan and heat it on medium flame and put ghee in it. Once it melts and hot then add pumpkin slices in it. Cook it for 1 minute and then add milk and yellow colour into it, mix it well. Cook the pumpkin in milk until it absorbs into it. Keep stirring so that it does not stick to the pan.

2. Once the Pumpkin cooked well in milk, then mash it perfectly with the help of spatula or masher. Then add Sugar into it, mix it and cook until sugar dissolved in it well. Keep stirring.

3. When the halwa thickens and absorbs milk and sugar well then add cardamom powder, desiccated coconut, almonds, cashew nuts, raisins & walnuts into it and mix it well. Pumpkin Halwa is ready and garnish it with dry fruits and serve it hot.
