Lemon Pickle



Lemon Pickle is very common and so delicious. You can have this pickle along with your parathas, poori, etc. You can also add it in the stuffing material to make stuffing more tastier. The pickle of lemon is also made in many ways.


This pickle is like a medicine as it does not have a drop of oil into it. Besides this, lemon and carom seeds have many medicinal qualities. It is good for digestion and If you don't add sugar in it then in that case, it can also be consumed by the diabetics. Best part of this pickle is that it can be stored for 1-2 years.

Here is the detail of all the ingredients and its method:


Ingredients:
Lemon - 1 Kg
Salt - 200 gms
Carom Seeds - 50 gms
Black Cardamom - 20 gms
Black Pepper Corns - 1 tbsp
Cumin Seeds - 2 tbsp
Cloves - 4-5
Kashmiri Chilli Powder - 4 tbsp
Sugar* - 100-150 gms approx. (Optional)


Method:
1. Wash the lemons and dry it well. Make a slit from centre and other slit intersecting the first one on each lemon.


2. Grind the black cardamom, black pepper corns, cumin seeds and cloves.


3. Take a bowl and put the above grinded masalas along with salt, carom seeds, Kashmiri Chilli Powder and sugar and mix it well.


4. Fill the slits of all the lemons with the above mixture of spices one by one and keep it into the jar. Once the jar filled with the lemons then close the lid tightly and keep it aside for 10 - 15 days. After that shake the jar well and again keep it aside. It can be eat after 1 month.


* This much amount of sugar will not add the sweetness in the pickle. It is only used to lessen the sourness of the pickle.
