Lachha Methi Mathri




This lachha methi mathri is very delicious and crispy. It is all time favourite snack to have with your tea/coffee. You can make it and store it in an airtight container for 4-5 weeks.

Ingredients:-
For dough:
Refined flour - 400 gm
Oil/ghee - 80 ml
Dry fenugreek leaves - 3-4 tablespoon
Salt to taste
Adequate Water for kneading


Oil for frying
Method:-
1. Take a bowl and put refined flour, dry fenugreek leaves and salt to taste in it and mix it well. Then add 80 ml oil into this and mix it with your hands. Lastly add adequate water to knead a firm dough for mathri. Dough should be firm so don't add much water. After this cover the dough to rest for 10 minutes.

2. Then divide the dough into three equal parts. Sprinkle some dry flour and roll these parts one by one with the help of rolling pin like chapatis.

3. Then take one rolled part of it and grease it with oil and sprinkle some dry flour over it. Then take another rolled part and paste it over the earlier one. Repeat the process and paste the third rolled part over it.

4. Then start making a tight roll of it starting from the one edge to other like a Swiss roll. Then cut this roll in 1 cm pieces. Take one piece, press it with your palm and roll it once or twice to make mathri. Repeat the process and make all the mathri.

5. Heat oil for frying the same into the pan. Then depending upon the size of the pan, put the mathris into the pan and fry it  on low flame until nice golden. Fry all the batches in the same way. Crispy Lachha methi mathri is ready now. Serve it with hot tea or coffee or you can preserve it in an airtight container.
