Dhokla




Dhokla is a very popular Gujarati dish. It is so delicious, tempted and healthy food to eat. It is made of with gram flour or rice flour fermented batter. You can have it in your breakfast or any other time of day as a snack. It is very light and healthy as it is a steamed food.

For making dhokla you can use citric acid or lemon juice. After steaming, dhokla then, tempered with mustard seeds,green chillies and sesame seeds and also drizzle sugar syrup which includes salt and lemon juice for tanginess.

Here is its full recipe:-

Ingredients:-
Gram flour (besan) - 1 cup
Semolina - 1 tablespoon
Lemon juice - 3 tablespoon
Salt to taste
Baking soda - 1 teaspoon
Oil - 2 tablespoons
Asafoetida - a pinch
Mustard seeds - 1 teaspoon
Sesame seeds - 1 teaspoon
Sugar - 2 tablespoons
Fresh coconut - 2 tablespoons (grated)
Coriander leaves -1 tablespoon
Green chillies - 5-6 (make a slit from centre)
Tamarind Sauce

Method:-
1. Take gram flour in a bowl. Add semolina, asafoetida and salt to taste and mix it well. Then add 2 tablespoons of lemon juice and 1 tablespoon of oil into it and mix it well. Then add adequate water and mix it well. (Consistency of batter is almost same as batter of pakodas). Keep it to rest for 10- 15 minutes.

2. Then just before steaming add baking soda in it and mix it well.

3. Boil water in a steamer. Now take dish, grease it with oil and fill it with dhokla mixture and steam it for 15 minutes. You can check it with knife or tooth pick.

4. Before unmould, let it cool for some time. Then unmould it. The dhokla is ready. Cut it into pieces.

5. Now take a tadka pan and add 1 tablespoon of oil into it. When it becomes hot then put mustard seeds, green chillies and sesame seeds in it. When it starts splutter then add sugar, salt to taste, 1 tablespoon of lemon juice and a cup of water into it and boil it for 1-2 minutes. Then pour this over the dhokla.
 
6. Then sprinkle coriander leaves and grated fresh coconut over it. While serving garnish it with tamarind (imli) sauce.
