Beetroot and Dry Dates Halwa




Beetroot and dry dates (chuara) halwa is a sweet dessert. It is not only contains the nutritious value of beetroot and dry dates but also has the great taste and colour too. Mava and dry fruits gives richness in the halwa. I used cream (malai) in the recipe, you can also use the full fat milk instead of cream.

Here is its full recipe:-
Ingredients:-
Beetroot - 200 gm (grated)
Dry Dates- 200 gm
Mawa (khoya) - 300 gm
Cream (Malai) - 1 cup
Ghee - 100 gms
Sugar - 150 gms
Milk Powder - 1/2 cup
Cardamom Powder - 1 teaspoon
 Desiccated coconut - 1 tablespoon
Flax seeds - 1 tablespoon
Melon seeds - 2 tablespoons
Raisins - 2 tablespoons
Crushed Almonds - 2 tablespoons
Crushed Cashew nuts - 2 tablespoons

Method:-
1. Boil the dry dates for 5 minutes or soak the dry dates into water for overnight. Then de-seed it and grate it. 

2. Take a non stick pan or thick bottom pan. Put the ghee and heat it. Then add grated beetroots into it and cook for 2-3 minutes or until the rawness of beetroot gone. Then add grated dry dates and cream (malai)  into it and mix it well and cook it on medium flame.

3. When cream amalgamates into the beetroot & dry dates mixture then add sugar, cardamom powder into it and mix it well and cook. Also add khoya and milk powder into it and cook it for sometime. Please keep stirring the same so that it won't stick.

4.  When it seems that halwa is almost ready then add  Desiccated coconut, Flax seeds, Melon seeds, Raisins, Crushed Almonds and Crushed Cashew nuts into it and mix it well. Keep stirring and cook for another 2-3 minutes and ensures that no liquid content should present in halwa. Then beetroot and dry dates halwa is ready to serve.

5. Put it in the bowl. Garnish it with the dry fruits and sprinkle some grated khoya over it and serve it hot.

You can also add tutti fruity (colourful cherries candy) or chopped pieces of gooseberry (amla) or apple murabba into it. It will enhance the taste of halwa and its nutritious value too.
