Amritsari Kulcha



Amritsari kulcha is very much famous. It is made of with the refined flour and potatoes stuffing. The dough of this kulcha is same as of plain naans. It can be served with masala chole, dal makhani or also with any kind of rayta.


It is not difficult to make at home. Simply follow the steps of recipe and make it on your own. So next time when you want to have these kulchas you don't need to go out. You can cook these amritsari kulchas at home.


Here is the full recipe of it:-
Ingredients:-
For Dough
Refined Flour - 1 Cup
Dry Yeast - 1 tsp
Sugar - 1 tsp
Lukewarm water - 3 tablespoon
Salt to taste
Water - as required
Oil - 1 tablespoon


For stuffing
Boiled Potatoes - 4 (Mashed)
Onion - 1 (Finely chopped)
Chopped Coriander leaves - 2 tsp
Salt to taste
Mustard Seeds - 1 tsp
Cumin Seeds - 1 tsp
Coriander Seeds- 1 tsp (Crushed)
Crushed Dried Mint Leaves - 1 tsp
Dry Mango Powder - 1 tsp
Chopped Green Chilli - 2
Red Chilli Powder- 1/2 tsp
Oil - 1 tbsp
Garam Masala - 1/2 tsp
Ghee/ Butter


Method:-
1. First of all take 3 tablespoon of lukewarm water in a bowl and put 1 teaspoon sugar and 1 teaspoon dry yeast in it and keep it aside for 10 minutes. When bubbles start appearing then it is ready to use.


2. Take a bowl. Put refined flour and make a well in it. Then add activated yeast in it and mix it. Then add salt to taste and adequate water in it to knead a soft dough. Then add oil and knead it until it mixes well.  Then cover it with the muslin cloth and keep it to rest for 1-2 hours for leavens.


3. For stuffing take a tadka pan and heat oil in it. Then Put Mustard seeds and cumin seeds it it and let them splutter. Then add chopped onions and saute it for 1-2 minutes. Put this into the mashed potatoes and also add the other ingredients of stuffing in it and mix it well.


4. Divide the dough & stuffing in 3-4 parts and take one part of dough and make a round ball and flatten it with your palms and then put one portion of stuffing over it and seal it from one edge to another and make a round ball again. Flatten it and roll it with the help of rolling pin. Make all the kulchas in the same way.


5. Then cook all the Kulchas in the tandoor or cook it on tava or cooker or bake it in the oven @ 180 degree celsius.


6. Apply butter over the kulcha and serve it hot with tomato-onion rayta or also with chole/dal makhani/ shahi paneer/ etc of your choice.
