Peas and Cauliflower Kulcha




Kulcha is one of the most popular Punjabi leavened flat bread which is usually made of refined flour. It is variation of naan. You can made it as plain or with any kind of stuffing.
To make it more healthier I prefer to use whole wheat flour instead of refined flour. I made it with stuffing of peas and cauliflower, so this kulcha becomes healthy as well as delicious. Here is its full recipe:


Ingredients:-
For Dough
Whole Wheat Flour - 1 Cup
Curd - 2 tbsp
Baking Soda- 1/4 tsp
Salt to taste
Water - as required


For stuffing
Peas - 1 cup
Cauliflower - 1/2 cup (grated)
Onion - 1 (Finely chopped)
Chopped Coriander leaves - 2 tsp
Salt to taste
Mustard Seeds - 1 tsp
Cumin Seeds - 1 tsp
Coriander Seeds- 1 tsp (Crushed)
Chaat masala - 1 tsp
Chopped Green Chilli - 2
Red Chilli Powder- 1/2 tsp
Oil - 1 tbsp
Garam Masala - 1/2 tsp


Ghee/ Butter


Method:-
1. Take a bowl. Put whole wheat flour and curd in it and mix it well. Then sprinkle salt to taste & Baking soda in it and mix it with hands. Add adequate water in it to knead a soft dough. Knead it well and cover it with the muslin cloth and keep it aside to prove it for 40-45 minutes.


2. For stuffing take a tadka pan and heat oil in it. Then Put mustard seeds and cumin seeds it it and let them splutter. Then add chopped onions and saute it for 1-2 minutes. Then add grated cauliflower and peas into this and cook it for 2-3 minutes. Add all other ingredients  into it and mix it well. Cook it for 2-3 minutes and crush the peas with the help of spatula.


3. Divide the dough & stuffing in 5-6 parts and take one part of dough and make a round ball and flatten it with your palms and then put one portion of stuffing over it and seal it from one edge to another and make a round ball again. Flatten it and roll it with the help of rolling pin. Make all the kulchas in the same way.


4. Then cook all the Kulchas in the tandoor or cook it on the tawa or bake it in the oven @ 180 degree. Apply the butter or ghee on the kulcha and your peas and cauliflower kulcha is ready now.

Serve it hot with curd or pickle or also with any curry dish.
