Peanut Potatoes




This recipe is so delicious yet easy to cook and also not required much ingredients. You can serve it as a snack, travel food or with poori or parathas. The kids surely like the same so you can serve it in their tiffin box or also make rolls/ frankie with it.
Here is the full recipe:-

Ingredients:-
Baby potatoes - 250 gm (boiled)
Peanuts - 4 tablespoons (crushed)
Onion - 1 (sliced)
Mustard seeds - 1 teaspoon
Cumin seeds - 1 teaspoon
Dried Mint Leaves - 1 tablespoon
Schezwan Sauce - 2 tablespoons
Tomato puree - 2 tablespoons
Chopped coriander leaves - 1 tablespoon
Chaat masala - 1 teaspoon
Red chilli powder - 1/4 teaspoon
Finely chopped green chillies - 3
Salt to taste
Oil - for frying

Method:-
1. Put boiled baby potato in your palms and gently press it. Do it with all the baby potatoes. Then heat oil into the pan and deep fry all the flattened baby potatoes until crisp and golden.

2. Take out all the oil leaving 2 spoons in the pan. Put mustard seeds and cumin seeds into it. Once it starts crackling then put onions into it and cook it for 1-2 minutes. Then add crushed peanuts, schezwan sauce and tomato puree into it and mix it well. Season it with chaat masala, salt to taste, crushed dried mint leaves and red chilli powder. Mix it well.

3. Then put the fried potatoes into it. Also add chopped coriander leaves and green chillies and toss it. Your peanut potatoes is ready to serve now.

4. Put it into the dish and garnish it with coriander sprigs.
