Beetroot Rabari with Milk Cake

We all are very familiar with rabadi. It is very popular dessert made of concentrated milk flavoured with Saffron, Cardamom, etc. It can served either chilled or hot.
Yesterday I made beetroot rabadi with milk cake. It was so tempting and delicious so I decided to share it with you. We all know about the fact that beetroot contains so much nutrients and it also gives a good texture, colour and taste to the rabadi. Here is the full recipe:-

Ingredients:-
Milk - 1 ltr
Beetroot - 2 (grated)
Milkcake (crushed) - 4-5 pcs.
Sugar - 4-5 tbsp
Milk powder - 3-4 tbsp
Cardamom powder - 1 teaspoon
Cashew nuts powder - 2 tablespoon
Crushed Almonds - 2 tablespoons
Desiccated coconut - 2 tablespoons
Raisins - 1 tablespoon
For garnishing:
Choco Wafer Stick
Fruit Jellies

Method:-
1. For making beetroot rabari, take a non stick pan and put the milk and cook it on medium heat and add sugar and grated beetroot into it and let it simmer until it reduced to 1/3. Keep stirring so that it doesn't stick to the pan. Add milk powder, cashew nut powder and cardamom powder into it and mix it well. Cook it for 4-5 minutes. Finally add crushed almonds, raisins and coconut powder into it and mix it well. Nice beetroot rabadi dessert is ready, keep it aside and let it cool. Refrigerate it for 1- 2 hours.

2.  Take glasses to serve this. Put some rabadi into it. Then sprinkle crushed milk cake over it. Then again repeat the process until glass filled. Garnish it with choco wafer stick and fruit jellies and serve it chilled. I am very much sure that everyone like this finger licking dessert.
