Stir Fry Bitter gourd's peels with potatoes wedges



We all cook the bitter gourd in our kitchen be it in stuffed form or regular chopped form. We also know its health benefits. Usually we throw the peels/ scrap of it. But my mom never throw its peels. Instead of throwing it she used to make the stir fried bhurji of bitter gourd's peels along with the potatoes and onions, whenever she cooks stuffed karela. It tastes so well. Since my childhood, I have been eating it with parathas. In fact I like it more than the stuffed bitter gourds. In this post I share the recipe of it which is as follows:-

Ingredients:-
Bitter gourds' peel scraps - 1 cup
Thin slices of Potatoes - 1 cup
Sliced onions - 1/2 cup
Chopped tomato - 1
Chopped raw mango - 1
Garam masala - 1/2 teaspoon
Coriander powder - 1 teaspoon
Chaat masala - 1/2 teaspoon
Red chilli powder - 1/2 teaspoon
Turmeric powder - 1/4 teaspoon
Salt to taste
Oil - 2-3 tablespoons


Method:-
1. Wash the bitter guard and dry it. Then cut the stem of it. Peel it with the knife or peeler. Sprinkle salt over the peels and keep it for 1/2 hour. Then wash it well.

2. Now take a pan. Heat oil into it. Add onions into it and sauté it for 2-3 minutes or until it becomes translucent. Then add tomatoes and raw mangoes into it and mix it well. Then add bitter gourd peels and potatoes into it, sprinkle salt to taste, mix it and cook it for 7-8 minutes.

3. Then add red chilli powder, turmeric powder, garam masala, coriander powder, chaat masala into it and mix it well. Cook for another 3-4 minutes.

4. Now karela chilka bhurji is ready. Garnish it with green chillies and serve it hot with chapati or parathas.
