It is a true fact that Ice cream is favourite dessert of people of all ages. From a kid to grand parents, everyone likes it so much and always ready to have it. Ice cream cake is a cake that incorporates ice cream between the layers of cake. You can use any combination of cake or ice cream of your choice. I use vanilla flavoured tuti fruti bread with strawberry ice cream and mango puree. Here is the full recipe of these mini cakes:-
Ingredients:-
Tuti frooti bread - 1 (vanilla flavoured sweet bread)
Strawberry ice cream - 1 brick
Strawberry Jam - 4 tablespoons
Pista Burfi - 4-5 pieces (crushed)
Coffee concoction - 2 tablespoons
Mango Puree - 1 cup
Chopped Mango - 1
Chopped Almonds - 2 tablespoons
Raisins - 2 tablespoons
Serves: 4
Method:-
1. Cut the edges of sweet bread slices. Also melt the strawberry jam in a pan. Now put square shaped cookie cutter on the plate. Now keep slice of bread into it. Soaked it with coffee concoction. Then spread 1/2 inch layer of strawberry ice cream over it. Spread pista burfi stuff over it. Then sprinkle chopped mangoes over it. Pour some melted jam over the mangoes.
2. Cover it with other slice of bread and spread melted jam over the slice evenly, then make 1/2" layer of mango puree over it. Sprinkle some chopped almonds. Then cover it with other slice of bread. Spread the coffee concoction over it with the brush.
3. Topped it with strawberry ice cream layer. Cover it with pista burfi crush then again spread the thin layer of ice cream over it. Lastly sprinkle some burfi crush, raisins and almonds over it and cover it with aluminium foil. Freeze it for 1-2 hours to set the cake. Make the other mini cakes too in the same way.
4. At the time of serving uncover the foil and take out the cookie cutter carefully and serve it chilled. No one can resist from having it. It is, surely, liked by children and their parents too.
