Carrot Lentil Muffin




Nowadays baked desserts like muffins, cup cakes, fudges, etc.are very popular. Everybody, be it a kid or adolescent or an aged person, likes it so much and always ready to have these. I am also one of them. However the bitter truth is that you can have these occasionally but not regularly as we all know that more consumption of these are not good for our health. It also contains so much of calories. Being a fitness freak, I am always more concerned about my calorie intake, though sometimes I find it very difficult to control on my tongue as cakes, muffins, chocolates are my favourites too.

Yesterday when I had craving for muffins and thought about baking the same, the idea came into my mind that what if i use the moong dal paste as a base ingredient instead of refined flour. I tried it and trust me it was as tasty as regular muffins yet more healthy.  To make it more healthier I added carrots in it which also gives mild natural sweetness in it and totally avoid butter. You can use honey for natural sweetness and avoid sugar totally and also add any fruit of your choice. Here is the full recipe of the same:-

Ingredients:-
Split moong dal - 1 cup (soaked)
Powdered Sugar - 3-4 tablespoons
Curd - 4-5 tablespoons
Semolina - 2-3 tablespoons
Vanilla essence - 1 teaspoon
Cardamom powder - 1 teaspoon
Baking soda - 1/4 teaspoon
Carrot - 1 (grated)
Chopped almonds - 1 tablespoon
Raisins - 1 tablespoon
Desiccated coconut - 1 tablespoon

For garnishing:-
Strawberry jam - 2-3 tablespoons

Prep time: 20 minutes
Cooking time: 15-20 minutes

Method:-
1. Take soaked moong dal and sugar in a mixer and grinds it to make a smooth paste and put this into a bowl and add rava in it. Add curd, grated carrots, vanilla essence, cardamom powder and water as required in it and mix it well.

2. Then just before steaming add baking soda in it and mix it well.

3. Boil water in a steamer. Now take silicon muffin moulds (if you use normal moulds then grease it first) and fill 3/4 of it by carrot lentil mix, sprinkle the desiccated coconut, chopped almonds and raisins over it and garnish with jam and steam it for 12-15 minutes.

4. Before unmould, let it cool for 5 minutes. Carrot lentil muffin is ready.

5. Serve it hot along with chocolate sauce.
