Ingredients:-
Soya chunks - 1 cup (soaked overnight)
Tamarind paste - 2 tablespoons
Onion paste - 1/2 cup
Tomatoes puree - 1 cup
Ginger garlic paste - 1 tablespoon
Mustard seeds - 1 teaspoon
Curry leaves - 5-6
Garam masala - 1/2 teaspoon
Kashmiri red chilli powder - 1/2 teaspoon
Turmeric powder - 1/4 teaspoon
Coriander powder - 1 teaspoon
Chaat masala - 1 teaspoon
Chopped Coriander leaves - 1 tablespoon
Oil - 2 tablespoons
Salt to taste

Serves - 3 to 4
Method:-
1. Heat oil in a non stick pan. Then add mustard seeds and curry leaves in it. When they splutter then add onion paste and ginger garlic paste into it and cook until brown. Then add tomato puree in it and cook for 1-2 minutes. Then add garam masala, coriander powder, turmeric powder, Kashmiri red chilli powder, chaat masala and salt to taste in it. Now cook it until the oil starts looking out from the spices.
2. Put soaked soya chunks, after squeezing it, into the masala. Add 1 cup of water in it and cover it with lid and cook it for 4-5 minutes so that flavours of masala incorporates into the soya chunks.
3. Then add tamarind paste into it and mix it well. Cook for another 2 minutes. Then sprinkle chopped coriander leaves over it and mix it well.
4. Tamarind soya masala is ready now. Garnish it with tomato and green chilli and serve it hot with chapati, paratha or rice.
