Stuffed Mini Uttapam


Ingredients:-
Fresh Bread - 4 slices

For uttapam mix:-
Rava (Semolina) - 1 cup
Curd - 1/2 cup
Mustard seeds - 1 teaspoon
Asafoetida - A pinch
Curry leaves - 5-6
Oil - 1 tablespoon
Pepper powder - 1/4 teaspoon
Baking Soda - 1/4 teaspoon
Salt to taste

For stuffing:-
Mashed Boiled potatoes - 2 tablespoons
Crumbled Paneer - 2 tablespoons
Chopped Onion - 1
Oil - 1 tablespoon
Coriander leaves - 1 tablespoon
Cumin seeds - 1 teaspoon
Coriander powder - 1 teaspoon
Pepper powder - 1/4 teaspoon
Salt to taste

For topping:-
Chopped Onion -1 tablespoon
Chopped Tomato- 1 tablespoon
Chopped carrots - 1 tablespoon
Chopped capsicum - 1 tablespoon
Chaat masala - 1 teaspoon
Salt to taste

Oil for shallow fry uttapams

Serves - 2

Method:-
1. Take a bowl and put rava in it. Add curd, asafoetida, pepper powder, salt to taste, water as required in it and mix it well.

2. Heat oil in a tadka pan and add mustard seeds and curry leaves in it. When it starts splutter then put this into the mixture of rava and mix it well and keep it aside for 20 minutes.

3. For stuffing, take a pan and heat oil. Then add cumin seeds into it. Then add chopped onions and caramelized it. Then add mashed potatoes and crumbled paneer into it and seasoned it with salt, coriander powder, pepper. Sprinkle chopped green coriander leaves into it and mix it well.

4. Put chopped onions, carrots, tomatoes and capsicum into the bowl and add chaat masala into it and mix it well.

5. Cut the roundels of bread slices with the help of cookie cutter.

6. Just before cooking the uttapam add baking soda in rava mixture and mix it well.

7. Take a non stick pan on a medium flame and grease it with oil. When it hot then coat the one side of bread roundel with rava mixture and put it on to the pan. Then Spread 1 tbsp of paneer stuffing over it and cover it with the other bread roundel. Pour 1 ladle of  rava mixture over the bread slice and spread evenly so that it covers the bread roundel fully. Then sprinkle chopped veggies mix over it and spray some oil over it and flip the mini uttapam carefully with the help of spatula and cook the other sides too.

8. The stuffed mini uttapam is ready. Serve it hot with tomato sauce or coconut chutney.
