Shahi Tukda



Ingredients:-
Brown Bread (can use the regular bread too) - 4 slices

For rabri:-
Milk (full cream) - 500 ml
Khoya - 100 gm
Sugar - 4-5 tablespoons
Cardamom powder - 1 teaspoon
Saffron - 3-4 strands
Desiccated coconut - 2 tablespoons
Crushed Almonds - 2 tablespoons
Crushed cashew nuts - 2 tablespoons
Dried berries - 1 tablespoon (chopped)
Flake seeds and watermelon seeds - 1 tablespoon

For Sugar Syrup:-
Sugar - 1 small cup
Water - 1/2 small cup
Lemon juice - 1 teaspoon
Cardamom powder - 1/2 teaspoon
Saffron - 3-4 strands

Oil/ ghee for frying

Serves: 4

Method:-
1. For making rabri for shahi toast, take a non stick pan and put the milk and cook it on medium heat and add sugar and saffron into it and let it simmer until it reduced to 1/3. Keep stirring so that it doesn't stick to the pan. Add khoya and cardamom powder into it and mix it well. Then add almonds, desiccated coconut powder, cashews into it and mix it well. Nice thick rabri is ready, keep it aside and let it cool.

2. Cut the edges of bread slices. Then deep fry the slices of bread until golden brown. Cut the slices into triangles.

3. For sugar syrup take a pan and heat water. Then add sugar, saffron and cardamom powder and stir it until the sugar dissolved. Add lemon juice in it for clearing the impurities of sugar. Cook it for 3-4 minutes and make 2 strings sugar syrup.

4.  Dip the fried bread triangles into sugar syrup and let it cool and keep it in the platter.

5. Pour the chilled rabri over the triangles and garnish it with dry fruits, berries, seeds and serve it.
