Sweet Beet Rice is a sweet delight made by beetroot and rice. It is so healthy as it contains the nutrients of beetroot and dry fruits too. It is cooked in microwave. You can cook this recipe in your regular cooktop.

Ingredients:
Basmati Rice- 1 Cup
Beetroot - 1 (grated)
Sugar - 3-4 tbsp
Pure Ghee - 2 tbsp
Almonds - 5-6 (peeled)
Walnuts - 3-4 kernels
Cashew Nuts - 6-7
Raisins - 1 tbsp
Desiccated Coconut - 1 tbsp
Flax Seeds - 1 tsp
Fennel Seeds - 1 tsp
Green Cardamom - 2 (crushed)
Method:
1. Heat 1 tsp of ghee and roast the dry fruits: almonds, cashew nuts, walnuts and raisins in it.

2. Heat the rest of the ghee and put flax seeds and fennel seeds in it. Roast them. Then add crushed green cardamoms in it. Then add grated beetroot and cook for 1-2 minutes. Lastly add sugar in it and mix it well. Then cook until sugar dissolved.
3. In a microwavable bowl add soaked rice in it and then add beetroot sugar mixture and mix it. Then add 2 cups of water in it and cook it in microwave for 12-15 minutes.
4. Sweet Beat rice is ready now. Garnish it with roasted dry fruits and desiccated coconut and serve it hot.
