Pickles are very important part of our food. Among other pickles, mango pickle is the one which is liked by all of us, be it a kid or an adolescent or aged person. We used to have it with parathas, puris, chapati. It is very common and important part of our daily meal.
I made shredded mango pickle along with kabuli chana and dry fruits. You can use it as pickle or chutney according to your choice. Here is the full recipe of it:
Ingredients:-
Raw mango (shredded) - 1 kg
kabuli chana - 1 cup (dry)
Fennel seeds - 50gms
Onion seeds - 25 gms
Fenugreek seeds - 100 gms
Whole Black pepper - 25 gms
Kashmiri Chilli powder - 50 gms
Turmeric powder - 30 gms
Salt - 200 gms
Mustard oil - 1/2 ltr
Melon seeds - 50 gms
Raisins - 50 gms
Method:-
1. Wash the raw mangoes and dry it. Then shred it with the help of shredder or you can also chopped it in chopper.
2. Take a big pan for mixing the pickle. Now put all ingredients (shredded Mangoes, all spices except chana, raisin, dry coconut and melon seeds) and half of mustard oil and mix it well.
3. Now add rest of the ingredients into it. Mix it well with your hands.
4. Put this into the airtight container and let it rest for 2-3 days. After 3 days, open the container and pour the rest of the mustard oil kept and mix it well with laddle and close it. Keep it to rest for 1 month and then it is ready to eat.
You can serve it as pickle or also use it in the stuffing of parathas, or put it in the veggies to give nice flavour of this in it.
