Bitter Gourd with Tomato Stuffing


Ingredients:-
Bitter gourd - 300 gm
Oil for deep frying

For stuffing:-
Finely diced tomatoes - 6-7
Finely chopped onion -1
Ginger garlic paste - 2 tablespoons
Coriander leaves - 2 tablespoons
Turmeric powder - 1/4 teaspoon
Red chilli powder - 1/2 teaspoon
Garam masala - 1/2 teaspoon
Dried mango powder - 1/2 teaspoon
Coriander powder - 1 teaspoon
Salt to taste
Oil - 2 tablespoons

Method:-
1. Peel the bitter gourd and make a slit from the centre and take out the seeds from it and wash it well.  Heat the oil in frying pan and deep fry all until golden brown.

2. Take a 2 tablespoons of oil into the pan and heat it. Then add onion into it and let it cook for 1-2 minutes, then add tomatoes into it and let it cook for 3-4 minutes. Add ginger garlic paste into it. Then add Turmeric powder, Red chilli powder, Garam masala, Dried mango powder, Coriander powder, Salt to taste into it and mix it well and cook for 1-2 minutes. Lastly add chopped coriander leaves into the masala and mix it well.

3. Fill the cooked masala into the slit of bitter gourds with the help of spoon. Stuffed bitter gourd is ready to eat now. Serve it hot with chapatti or parathas.
